How To Make The Best Vegetable Beef Soup
I love making my own stock. If I have a beef soup bone, I will add that to the broth, or If I have leftover prime rib bones,I will use those. When I don’t have time to make my own stock, I use Better Than Bouillon to create a rich, savory base of stock to build on, which is perfect for beef and vegetable soup alike.
Homemade or high-quality stock is a must! I keep a plastic bag in my freezer and throw all my veggie scraps in it to save up and make homemade stock or try new soup recipes with fresh stock, especially for classic vegetable beef soups.

How To Store Soup
I freeze my soups in Mason Jars. The pint jar is a 2-cup portion that is perfect for a single serving. The quart jars are 4 cup servings, perfect for lunch or dinner with some fresh bread and a cheese course. The key to using Mason jars is to leave an inch and a half of space at the top, which works great for all kinds of brothy recipes, including Vegetable Beef Soup.
