Southwest Chicken Soup Ingredients
I always try to create recipes that are both yummy and achievable with ingredients you can find at any supermarket. Here’s a quick breakdown of what makes this soup shine:
- Poblano Peppers: Milder than jalapeños but packed with a subtle smoky flavour, these are a must for that Southwestern flair.
- Zucchini: Adds a fresh and slightly sweet note that balances out the bold spices.
- Tomatillos: Their bright, slightly tangy taste is the perfect contrast to the rich broth.
- Fire-Roasted Diced Tomatoes: These bring a smoky depth that elevates the whole soup.
- Chicken Breast: Cooks perfectly in the Instant Pot and shreds like a dream.
- Spices: Chili powder, cumin, smoked paprika, and lime juice come together to create an irresistible blend of heat, smokiness, and zing.
How to Make Southwest Chicken Soup
- Turn your Instant Pot to Sauté and add a splash of oil. Sauté the onion, poblano peppers, bell peppers, and garlic for a few minutes until softened and fragrant. Be careful not to let anything burn; this setting gets hot fast!
- Turn off the Instant Pot. Add chopped zucchini and tomatillos.
- Place the halved chicken breasts on top of the vegetables.
- Pour in the chicken broth and add all the spices, chili powder, cumin, smoked paprika, sea salt, black pepper, and lime zest.
- Lock the lid and set the valve to Sealing. Cook on High Pressure for 15 minutes.
- Allow pressure to release naturally for 5 minutes, then do a quick release.
- Carefully remove the chicken, shred it with two forks, and return it to the soup.
- Stir in lime juice. Taste and adjust seasoning if needed.
- Garnish with your favourite toppings like crushed tortillas, shredded cheddar, avocado, cilantro, or pickled jalapeños.
Frequently Asked Questions
Yes! Just sauté the vegetables in a large pot, then add the remaining ingredients. Simmer everything together until the chicken is cooked through, then shred it and return to the pot.
Absolutely. Boneless, skinless thighs will be just as delicious and even more tender. You can cook them the same way in the Instant Pot; no need to adjust the timing.
Yes! This soup freezes beautifully. Let it cool completely, then store it in freezer-safe containers for up to 3 months. Thaw in the fridge overnight and reheat gently on the stovetop.
A Few Possible Variations of My Southwest Chicken Soup
- Spice it up: Add a diced jalapeño with the onions or a dash of hot sauce at the end.
- Make it vegetarian: Skip the chicken and add black beans or chickpeas for protein. Use vegetable broth instead.
- Add grains: Stir in some cooked rice, quinoa, or corn for extra heartiness.
- Change the protein: Try leftover turkey, rotisserie chicken, or even shredded pork.
How Do You Like Your Southwest Chicken Soup?
This soup is hearty enough to stand on its own, but it’s also delicious with a little something extra on the side. Serve it with a wedge of lime, warm cornbread, or tortilla chips for scooping. A chilled Mexican lager or a tangy margarita would round out the meal beautifully, too.
Storing Leftover Soup
Let the soup cool completely, then transfer to an airtight container. Store in the fridge for up to 4 days. To reheat, warm gently in a pot over medium heat or in the microwave. This soup also freezes well, just be sure to leave out any toppings until you’re ready to serve.
