There is a moment every September when I stand in my kitchen, look at the calendar, and refuse to believe it. The tomatoes are still coming, the lake is still (technically) swimmable, and I am not ready to trade in my salsa bowl for a soup pot. These roasted shrimp tostadas are my act of seasonal defiance. They’re bright, crunchy, a little spicy, and they taste like summer even when the sweatshirts start coming out.

The best part? Everything goes in a 450-degree oven. The tortillas crisp up, the shrimp roasts in four minutes flat, and while that happens you chop a mango salsa that makes you look like you tried much harder than you did. That’s my favorite kind of dinner.
Why This Recipe Works
- Oven-baked tostadas, no frying. Brushing heirloom corn tortillas with olive oil and baking them gives you that shattery crunch without a pot of hot oil on the stove.
- Shrimp roasts in 4 minutes. High heat means tender, juicy shrimp with a little caramelization. Old Bay and paprika give it that coastal-meets-cantina flavor.
- Sweet, heat, and crunch. Juicy mango, jalapeño, and red onion balance the savory shrimp, and the lime-tossed red cabbage adds crunch and a gorgeous pop of color.
- Earthy Black Beans to tie it all together and create a canvas for the salsa to stick
- Same oven temp for everything. One temperature, two sheet pans, minimal fuss.

Ingredients
Roasted Shrimp
- 18–24 shrimp (about 1 pound), peeled and deveined
- 2 teaspoons olive oil
- 1 teaspoon ground paprika
- 2 teaspoons Old Bay seasoning
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
Tostadas
- 8 heirloom corn tortillas
- 3 tablespoons olive oil
- Refried vBlack Beans
Mango Salsa
- 1 fresh mango, peeled and diced
- 1/3 cup red pepper, diced
- 1/3 cup red onion, diced
- 1 jalapeño, seeded, ribs removed, diced (pickled jalapeño works too)
- 1/3 cup fresh cilantro
- 1/2 lime, juiced
- 1 teaspoon kosher salt
Red Cabbage Slaw
- 1 cup red cabbage, thinly sliced
- 1/2 lime, juiced
- 1/2 teaspoon salt
Instructions

Prepare the Tortillas
- Preheat the oven to 450°F.
- Brush the tortillas with oil on both sides and lay them on a parchment- or silicone-lined baking sheet.
- Bake for 6–8 minutes, flipping halfway through, until firm and crisp.
- Let cool and spread with 2-3 Tablespoons of refried black beans
Roast the Shrimp
- Toss the shrimp with the olive oil, Old Bay, paprika, salt, and pepper.
- Spread on a baking sheet and roast at 450°F for about 4 minutes, until pink, opaque, and cooked through.
Make the Mango Salsa
- Peel the mango and cut the flesh away from the pit.
- Finely dice the mango, red onion, and red pepper to roughly the same size and add to a bowl.
- Slice the jalapeño in half, remove the seeds and ribs, dice finely, and add to the bowl.
- Chop the cilantro and juice the lime. Add both to the bowl with the kosher salt and stir to combine.
Make the Red Cabbage Slaw
- Thinly slice the red cabbage and toss with the lime juice and salt. Let it sit while you assemble.
Assemble
Top each tostada with black beans, a generous spoonful of mango salsa, top with shrimp and a pile of red cabbage slaw. Serve right away while everything is crunchy.
Tips for the Best Shrimp Tostadas

- Don’t walk away from the shrimp. Four minutes goes fast. Pull them as soon as they turn pink and curl into a loose “C.” A tight “O” means overcooked.
- Pat the shrimp dry before seasoning so they roast instead of steam.
- Cut the salsa uniformly. When everything is about the same size, you get a little of everything in every bite.
- Test your jalapeño. Some are fire, some are bell peppers in disguise. Taste a sliver before you add it, and swap in pickled jalapeños if you want more tang and less guesswork.
- Make the salsa first if you have time. Twenty minutes in the fridge lets the flavors get to know each other.
- Assemble at the table. Tostadas get soggy if they sit, so set out the components and let everyone build their own.
What to Serve with Roasted Shrimp Tostadas
Turn tostada night into a full spread with a few of my favorites from stephaniesdish.com:
- Guacamole with Grilled Avocado: Grilling the avocados and onions gives this guac a smoky edge that plays beautifully with the sweet mango salsa. It’s straight out of my True North Cabin Cookbook, and it’s on the table at cabin happy hour all summer long.
- Elote Corn on the Cob: My at-home take on the State Fair favorite from El Burrito Mercado, slathered with lime crema, Cotija, Tajín, and cilantro. Catch the last of the sweet corn while you can.
- Instant Pot Black Bean Soup with Tortilla Strips: Smoky with chipotle and cumin, and a great way to make this a heartier meal as the nights get cooler. Serve it in little cups on the side.
- Baked Rice with Tomatoes and Garlic: A hands-off oven rice loaded with roasted tomatoes and cilantro. Add black beans and corn to push it in a Mexican-inspired direction.
- Classic Margarita (Family Recipe): Fresh limes, good tequila, orange liqueur, salted rim. It is the correct beverage for shrimp tostadas and I will not be taking questions.
