It is almost Fathers Day Weekend which means Summer Slaw season! This red cabbage slaw with peanuts and cilantro is a wonderful version with Asian inspired flavors.
How to pick a red cabbage at the grocery store? Here are some things to look for:
Look for Firmness: Choose a cabbage that feels heavy for its size and is firm to the touch. Avoid ones that feel soft or have blemishes.
Check the Leaves: The leaves should be tightly packed and crisp. Avoid cabbages with wilted or yellowing leaves.
Color: Red cabbage should have vibrant, deep purple-red color, perfect for making slaw. The outer leaves may have a darker hue compared to the inner ones.
Size: Size can vary, but typically smaller to medium-sized cabbages tend to be more tender.
Stem: The stem should be intact and not dried out.

The dish was introduced to the United States by Dutch immigrants. Red cabbage slaw quickly became popular, and it is now a staple of many American meals. It is served as a side dish with barbecue, fried chicken, and other American favorites. There are many different variations of coleslaw, but the most common type is made with shredded cabbage, mayonnaise, vinegar, and sugar. Some people also add other ingredients to their coleslaw, such as carrots, celery, onions, or apple.
Here is me making this on the Jason Show
My favorite version of coleslaw is made with red cabbage. I love how this particular type of cabbage offers such beautiful color while also providing a sturdy salad base for Summer picnics that won’t wilt in the hot sun. This slaw made from red cabbage is sans mayo, too so it can sit out a bit longer in the heat.
