Winter Roasted Cabbage Salad

Salad Season is always in January for me. I know … it makes no sense to load up on salad at a time when there is not a fresh green leaf in site, but I think it’s a reaction to all the rich food I have eaten over the holidays. Winter salads are fun and require a bit more creativity so how about Roast Cabbage Salad with a bright  vinaigrette with citrus, honey, soy and fish sauce?

Winter Roasted Cabbage Salad with Citrus Dressing

Yield: 4-6


  • 1 medium head green cabbage cut in half and then into 6 wedges (leave the core intact to hold pieces together)
  • 1 1/2 Tbsp vegetable oil
  • 2 teaspoons Kosher salt
  • 1 bunch mint leaves roughly chopped
  • 1/3 cup Italian parsley roughly chopped
  • 1 bunch Dill roughly chopped
  • 2 scallions, thinly sliced
  • Lemon zest

For the dressing:

  • 2 Tbsp lime juice
  • 1 Tbsp lemon juice
  • 2 Tbsp brown sugar
  • 2 Tbsp rice wine vinegar
  • 1 Tbsp fish sauce
  • 1 Tbsp chili garlic sauce (like Sambal Oelek) or sriracha, plus more to taste
  • 1 Tbsp soy sauce
  • 1 Tbsp honey
  • 3 Tbsp olive oil
  • Fresh cracked black pepper


  1. Preheat oven to 450
  2. Cut the head in half, then cut each half into 5 half moons. Spread on a baking sheet, rub on all sides with the oil, and sprinkle lightly with salt.
  3. Roast for 30 minutes until brown in spots
  4. Arrange on a platter
  5. Make the dressing: Blend the lime, lemon juice, brown sugar, rice vinegar, fish sauce, chili garlic sauce, soy sauce, honey, olive oil, and pepper in a mason jar and shake to blend and pour over the roasted cabbage.
  6. Top cabbage with mint, parsley, dill and green onions and zest lemon on top
