Watermelon, cucumber salad with basil, mint, green onions and feta

This watermelon cucumber salad with basil, mint, green onions, and feta is a super fresh take on a Summer salad. The first time I ate watermelon and feta together as a salad, I was not sure I would like it, but it totally worked. The scattering of all the Summer herbs like fresh mint, basil, and green onions brings it over the top and makes it feel like a party.

How to pick a watermelon? Here are some tips.

  • Look for a symmetrical shape. An evenly round or oval watermelon is more likely to be ripe and have a good flavor.
  • Check the color of the rind. The rind should be deep, dark green with a creamy yellow or orange spot on the underside. The spot is where the watermelon sat on the ground as it ripened, and a darker spot indicates that the melon was on the vine longer and is, therefore, sweeter.
  • Give it a thump. When you thump a ripe watermelon, it should sound hollow. If it sounds dull or thuds, it is not ripe.
  • Inspect the field spot. The field spot is the creamy yellow or orange spot on the underside of the watermelon. It should be large and well-defined. If the field spot is small or faint, the watermelon is not ripe.
  • Smell the watermelon. A ripe watermelon will have a sweet, musky smell. If the watermelon does not have a strong smell, it is not ripe.
  • Check the weight. A ripe watermelon will be heavy for its size.

This simple salad is perfect on a warm Summer night

Ingredients

For the dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt

For the salad

  • 6 cups cubed watermelon 
  • 1  cucumber, seeded and cubed
  • 1/2 cup chopped mint leaves
  • 1/2 cup basil sliced into shreds
  • ½ cup crumbled feta cheese

Instructions

To make the dressing

In a pint mason jar shake the honey, lime juice, olive oil, and salt.

To make the salad

  1. In a large platter, combine the watermelon and cucumbers.
  2. Scatter the fruit with the mint and basil
  3. Top the salad with the dressing and gently toss to combine. Top with the feta and serve!
