Summer Recipes
There is truly no time to waste in our hard-earned Minnesota summers. We fill our days with picnics, cabin weekends and outdoor activities of all kinds to soak up every minute of sunshine and warm weather. And what summer day is complete without great food? I love cooking in the summer (in fact, I wrote a book on it), because the recipes are light, simple and tasty. Here are some of my favorite recipes to make all summer long, from light but hearty mains to side dishes perfect with a grilled steak on a warm July day.

Zucchini is one of my favorite summer vegetables. You will harvest a ton if you add it to your garden, which will result in tasty, light lunches like this salad.
