Strawberry Spinach Salad with Goat Cheese & Rhubarb Shrub Vinaigrette
Ingredients
Salad

4 cups of baby spinach

8 medium-sized strawberries, tops removed and quartered

3 oz honey goat cheese, crumbled
-
1/4 cup chopped nuts (I use either walnuts, pecans or slivered almonds)
Rhubarb Vinaigrette

1/4 cup Rhubarb Shrub (you can substitute other flavored kinds of vinegar)

1/3 cup olive oil
-
1 teaspoon honey
-
1/2 tsp kosher salt
Instructions
- In a large salad bowl add spinach. Top with strawberries, goat cheese and nuts.
- In a small mason jar, combine vinaigrette ingredients (shrub, oil, honey, and salt.) Place lid on the jar and shake to completely combine.
- Drizzle lightly over salad.
