Spicy Asian Tuna Salad

Spicy Asian Tuna Salad

Yield: 4 cups

I eat this salad, adapted from the Life Cafe by Lifetime Fitness for breakfast or for lunch. It is packed with protein and keeps for days in the refrigerator

Ingredients

  • I cup mayo
  • ½ cup sambel olek
  • ¼ cup sesame oil
  • 2 tbsp. soy sauce
  • 2 tbsp. honey
  • 1 tbsp lime juice
  • 2 tbsp. ginger powder
  • 1 ½ tsp. salt
  • 2 tbsp. sesame seeds (white or black)
  • ½ cup craisins
  • ½ cup chopped cilantro
  • ½ cup shredded carrots
  • ½ cup finely chopped green onions green and white parts
  • 1 pouch or two large cans of white albacore tuna packed in water

Instructions

  1. Hand mix all ingredients
  2. Serve in a bowl, wrap or in large lettuce leaves
