Spicy Asian Tuna Salad

Spicy Asian Tuna Salad
Yield:
4 cups
I eat this salad, adapted from the Life Cafe by Lifetime Fitness for breakfast or for lunch. It is packed with protein and keeps for days in the refrigerator
Ingredients
- I cup mayo
- ½ cup sambel olek
- ¼ cup sesame oil
- 2 tbsp. soy sauce
- 2 tbsp. honey
- 1 tbsp lime juice
- 2 tbsp. ginger powder
- 1 ½ tsp. salt
- 2 tbsp. sesame seeds (white or black)
- ½ cup craisins
- ½ cup chopped cilantro
- ½ cup shredded carrots
- ½ cup finely chopped green onions green and white parts
- 1 pouch or two large cans of white albacore tuna packed in water
Instructions
- Hand mix all ingredients
- Serve in a bowl, wrap or in large lettuce leaves
