Skyler’s Easy Summer Holiday Cake

My niece Skyler is 12 and is getting very interested in baking. We share a birthday month so often times we celebrate our birthdays together. This year the family came to my cabin in Ely and Skyler and I wanted to make our own cake. Skyler likes strawberries and I wanted something she could help me make that would be quick, easy, and delicious. This cake won rave reviews and can be used for the 4th of July or any summer get-together. You can add sliced and macerated extra berries on the side or do a red, white, and blue theme for the 4th of July. Feel free to add sour cream or an 8 oz container of Marscapone Cheese if you want a richer flavored thicker frosting.

Summer Cake Recipe

Ingredients for the Cake

  • 1 white cake mix
  • 1 cup water
  • ½ cup vegetable oil
  • 3 eggs

Ingredients for the Frosting

  • 1 package washed strawberries cut in halves or quarters if large (alternate berries like raspberries or blueberries may be used)
  • 1-pint heavy whipping cream
  • ½ tsp cream of tartar
  • 1/3 cup confection sugar

Instructions

  1. Preheat oven to 350
  2. Assemble cake and back according to package instructions for 2 8-inch cake rounds
  3. Place 1 cake on a platter or cake stand with waxed or parchment paper pieces underneath that can be pulled out when the cake is complete to create a clean platter for the cake to rest on.
  4. Make frosting by combining whip cream, cream of tartar, and confectioners sugar until cream holds its peaks.
  5. Put 1/3 of whip cream on the cake bottom and smooth out.
  6. Place a layer of strawberries on top
  7. Lay second cake on top of the first layer
  8. Top with 1/3 whip cream
  9. Place another layer of strawberries on top
  10. You can stop here or use the remaining whip cream to frost the sides of the cake.
  11. Pull the paper pieces from the base of the cake so you have a clean finish.
  12. Slice and serve
