Shaved Asparagus Salad

It’s Asparagus season and there is nothing better than a shaved fresh asparagus salad. Shaved vegetable salads are a delicious and healthy way to enjoy a variety of vegetables. They are easy to make and can be customized to your liking.

You will need a mandoline, or I prefer a vegetable peeler to make a shaved vegetable salad.  You can use any type of vegetables you like, but popular choices include carrots, cucumbers, radishes, beets, and of course asparagus. Once your vegetables are prepared, you can add a simple vinaigrette dressing like my favorite mustard vinaigrette and any other ingredients you like, like shaved vegetable salad, such as nuts, seeds, fruits, or herbs.

This salad makes terrific use of those fresh tender Asparagus spears that emerge in the Spring


  • ½ pound asparagus
  • 2 Tablespoons lemon juice
  • 3 Tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • Salt and pepper
  • A hunk of Parmesan cheese or shaving


  1. Snap off and freeze the tough ends of the asparagus. (for this soup recipe, here)
  2. Using a sharp vegetable peeler, shave the asparagus lengthwise into paper-thin ribbons
  3. In a small jar, shake together the lemon juice, olive oil, and Dijon mustard to make a dressing.
  4. Season to taste with salt and pepper
  5. Arrange shred on a serving platter
  6. With a vegetable peeler, shave thin curls of Parmesan over the salad. Accompany with an optional handful of toasted pine nuts or crisped prosciutto, or garnish the platter with arugula leaves.

    • Shaved Radish Salad: This spicy salad is made with thinly sliced radishes, a vinaigrette dressing, and a sprinkle of chives.
    • Shaved Beet Salad: This colorful salad is made with thinly sliced beets, a balsamic vinaigrette dressing, and a sprinkle of goat cheese.
