Salmon Feta and Herb Salad with Quinoa
What makes a delicious Winter Salad? Just like Summer salads it’s all about the ingredients – but you have to work a bit harder to make them shine with herbs, spices, flavorful salty cheeses, and proteins. Consider using crunchy nuts, bitter greens, or roasted vegetables to give your salad texture, and remember the magic rules for the perfect salad:
- Quality vegetables
- Dressing with the right amount of acid and fat
- Something Crunchy
- Something Salty
- Something Sweet

Salmon, Feta and Herb Salad with Quinoa
A bright salad to pick you up in Winter
Ingredients
For the Salad
- 3 cups arugula
- 1½ cups cooked quinoa drizzled with 1 Tbsp olive oil and tossed
- ¼ fresh herbs (choose from basil, parsley, cilantro, or dill leaves or a combination) roughly chopped
- ¼ cup of fresh mint leaves and tender stems, roughly chopped
- 1 cup cucumber, diced into ½-inch pieces
- 2 scallions, light green and white parts sliced
- 12 oz of roasted salmon cooled and broken into larger chunks
- ½ cup crumbled feta cheese
For the Dressing
- For the dressing
- 2 cloves garlic microplaned
- 1 Tbsp honey
- The juice and zest of 1 lemon
- 1 Tbsp Dion mustard
- 1/2 tsp kosher salt
- 1/4 pinch of red pepper flakes
- 2 Tbsp rice vinegar
- 3 Tbsp olive oil
- Cracked black pepper to taste
Instructions
- Combine the salad ingredients in a large bowl or platter, arranging the salmon and feta over the top
- To make the dressing, Microplane the garlic and add it to a mason jar with sea salt, mustard, red pepper flakes, honey, vinegar, and olive oil
- Shake vigorously until you get a creamy texture
- Pour the dressing over the salad, then season to taste with salt and pepper.
- Toss before serving
