Roasted Pear Salad with Crispy Honeyed Almonds

Roasted Pear Salad with Crispy Honeyed Almonds

Yield: 4

This is an easy Winter salad that takes advantage of pears that are not ripe.


For the pears

  • 2 firm Bosc pears
  • 1 tsp olive oil

For the honeyed almonds

  • 1 cup sliced almonds
  • 1 Tbsp honey

For the salad

  • 1 box mixed lettuce (I like bitter greens like Arugula, Spinach, Radichio)

For the shrub dressing

  • 2 cloves garlic microplaned
  • 1 Tbsp honey
  • The juice and zest of 1 lemon
  • 1 Tbsp Dion mustard
  • 1/2 tsp kosher salt
  • 1/4 pinch of red pepper flakes
  • 2 Tbsp rice vinegar
  • 3 Tbsp olive oil
  • Cracked black pepper to taste
  • 1 Tbsp.Shrub or fruit vinegar (I like Sharb Shrub Asian Pear)


For the pears

1. Preheat oven to 400

2. Cut pears in half and core out the seeds

3. Cut each half into 4 wedges

4. Toss with 1 ts olive oil and lay on parchment or silpat lined tray

5. Roast at 400 degrees for 25 minutes until brown and toasted in spots.

For the honeyed almonds

1. Heat slivered almonds in a non-stick skillet on medium heat for about 4 minutes until toasting.

2. Once they start to brown, add Tbsp honey and begin to toss off the heat until the honey is melted and coating all the nuts.

3. Pour out onto the parchment or Silpat pan you used for the roasted pears and set aside for 10 minutes to harden and crystalize

For the dressing

1. To make the dressing, Microplane the garlic and add it to a mason jar with sea salt, mustard, red pepper flakes, honey, vinegar, and olive oil

2. Add 1 Tbsp Shrub

2. Shake vigorously until you get a creamy texture

To assemble the salad

1. Toss dressing and lettuce

2. Arrange pears on top of dressed salad

3. Top with honeyed almonds


You can use any shrub or fruit vinegar. I like Sharab Shrubs, Asian Pear, Ginger Cinnamon
