Rhubarb Compote

With the tons of rhubarb recipes I have on my site, I realized I didn’t actually have an official rhubarb compote recipe as I usually have plenty of it leftover after making Rhubrab Shrubs or Rhubarb Syrup as the compote is actually the rough jam that is left over after pressing out the solids. It’s still so flavorful and can be used in so many recipes like muffins, pancakes, pies, bread, ice cream, tarts, or cakes.

Here is a simple compote if you need it for any of the rhubarb recipes

Rhubarb Compote

Yield: 2 cups

Use this compote for cakes, muffins, tarts, pie fillings, jams, or ice cream.

Ingredients

  • 5 cups rhubarb cut into 1/2 inch pieces
  • 1 cup granulated sugar

Instructions

  1. In a saucepan, combine rhubarb with sugar over low heat. Cook for 5-8 minutes until the rhubarb softens and gets juicy.
  2. Transfer Rhubarb to a strainer over a bowl.
  3. Press the rhubarb with a spatula through the strainer extracting the juices into the bowl and leaving behind the rough jam compote.
  4. Save the syrup for drinks or to use as a sauce over the cake or ice cream.
  5. Store the compote in 1/2 cup batches for cakes, muffins, tarts, pie fillings, jams, or ice cream.
