Rhubarb Buckle

Just when I think I am getting to the end of the rhubarb, more show up, and I couldn’t be happier. This Rhubarb Buckle Cake is simply delicious and very easy to make if you have some Rhubarb compote from making your Rhubarb shrub or Rhubarb syrup recipes. The actual Rhubarb compote recipe is here, too if you need it.

For the decoration, use Rhubarb that’s not too woody so it breaks down, or feel free to peel the outer layer off. This is meant to be simply a pretty garnish and doesn’t add too much to the cake, so don’t go overboard on the lattice work if the rhubarb is tough.

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 eggs
  • 1/3 cup of rhubarb compote or rhubarb jam. (see notes for compote recipe)
  • 2 stalks of trimmed rhubarb, thinly sliced for garnish

Instructions

  1. Preheat the oven to 350°F
  1. Coat an 8-inch pan with vegetable oil spray or butter. I like using a cake pan or a springform pan, but a square pan also works.
  2. Whisk the flour, baking powder, cinnamon, and salt; set aside.
  3. Using an electric mixer, beat the butter and the 1 cup sugar on medium speed until pale and fluffy, 5 minutes.
  4. Add the room-temperature eggs one at a time, beating well. Add the flour mixture and beat on low until well blended.
  5. Dump the batter into the prepared pan and spread evenly with your hands or the back of a spoon. The batter is thick.
  6. Drop the compote by teaspoon on top of the cake. Swirl compote into the batter with a knife. Lay the rhubarb stalks placing them close together and poking them down with your finger in the batter. YOu can create a design or simply lay them on.
  7. Bake until the top is golden and the edges pull away from the pan, and a tester inserted into the center of the cake comes out clean, 50 to 60 minutes.
  8. Let cool. and serve with whip cream, ice cream
