Rhubarb Bread with Almonds

Yield: 12

Another great use of rhubarb is this almond-topped loaf that is not too sweet and has a nutty top.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 Tbsp lemon zest
  • 3/4 full fat greek yogurt
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon almond extract
  • 1 1/2 cups rhubarb chopped into 1/4 pieces
  • 1/4 cup sliced almonds

Instructions

  1. Preheat oven to 350
  2. Spray your loaf pan with cooking spray
  3. Whisk flour, baking powder, and salt in a medium bowl.
  4. In a large bowl add sugar, and with your hands, rub in the lemon zest until well distributed then add the yogurt, oil, eggs, and almond extract and combine
  5. Add the dry ingredients to the wet ingredients and fold in the rhubarb
  6. Pour batter into the greased pan
  7. Sprinkle with the sliced almonds and bake for 55-60 minutes until the top of the cake is golden brown and a tester inserted into the center comes out clean.
  8. Wait to cool and dust with powdered sugar if you choose
