Red Cabbage Slaw with Peanuts and Cilantro

It is almost Fathers Day Weekend which means Summer Slaw season! This red cabbage slaw with peanuts and cilantro is a wonderful version with Asian inspired flavors. 

The dish was introduced to the United States by Dutch immigrants. Coleslaw quickly became popular in the United States, and it is now a staple of many American meals. It is often served as a side dish with barbecue, fried chicken, and other American favorites. There are many different variations of coleslaw, but the most common type is made with shredded cabbage, mayonnaise, vinegar, and sugar. Some people also add other ingredients to their coleslaw, such as carrots, celery, onions, or apple. Coleslaw can be served either warm or cold.


My favorite version of coleslaw is made with red cabbage. I love how this particular type of cabbage offers such beautiful color while also providing a sturdy salad base for Summer picnics that won’t wilt in the hot sun. This salad is sans mayo, too so it can sit out a bit longer in the heat.

Red Cabbage Slaw with Peanuts and Cilantro

This is a great Summer side that lasts a few days and feeds a crowd.


For the Salad:

  • 1 lb shredded cabbage -roughly 6-7 cups
  • 4 scallions, sliced, white and green parts
  • 1 cup orange, red and yellow peppers cut into match sticks
  • 1 cup cilantro, chopped
  • 1/2 cup mint chopped
  • 1/3 cup peanuts (crush them with the back of a knife to rough chop)

For The Dressing

  • 4 Tbsp olive oil
  • 1 Tbsp toasted sesame oil
  • 1/4 cup rice wine vinegar
  • 3 Tbsp honey
  • 1 Tbsp soy sauce
  • 1 large garlic clove grated on a micro plane
  • 1 Tbsp ginger grated on a micro plane
  • Zest of one lime
  • Juice of one lime
  • 1/2 tsp chili flakes
  • 1 tsp kosher salt


  1. Toss slaw ingredients together in a large bowl. Add cilantro, mint and scallions.
  2. Shake Dressing ingredients together in a mason jar
  3. Pour dressing onto slaw and toss well
  4. Garnish with nuts


    Top with grilled or rotisserie Chicken or serve alongside Grilled Salmon or Flank Steak for a main dish salad
