Radish and Cucumber Salad with Herbs and Goat Cheese
This radish and cucumber salad is a perfect early Spring or Summer salad when you get your first batch of radishes. I used goat cheese here, but you could easily swap in Feta. There are no hard and fast rules for herbs either – use what you have on hand. I like dill, chives, basil, cilantro, mint, or parsley – all would work fine. There are endless possibilities, so get creative and enjoy!

Early Spring Radish, Cucumber Salad with Goat Cheese

This salad is perfect with the season's first radishes.
Ingredients
For the Dressing:
- 1 Tbsp minced shallots
- 2 tsp white wine or champagne vinegar
- 2 tsp honey
- 1/2 tsp kosher salt
For the Salad:
- 1 large English or 4 small Persian cucumbers, thinly sliced
- 12 radishes, thinly sliced
- 3 stalks of celery with leaves, thinly sliced
- ¼ cup minced dill
- ¼ cup minced green onions (green parts only) or chives if you the the blossoms they are pretty to use too
- 3 Tbsp chopped mint
- 4 ounces The Humble Goat Goat Cheese
Instructions
Make the dressing:
- In a salad bowl, combine olive oil, shallots, vinegar, honey, and kosher salt shake in a mason jar to
blend
Make the salad:
- Combine cucumber, radishes, celery, dill, chives or scallions, and mint in the bowl with the dressing. Toss to combine. Top with crumbled goat cheese, freshly cracked pepper, and a sprinkle of salt. Serve immediately.
