Quinoa salad with apricots, raisins and pine nuts

Quinoa has become the world’s wonder grain due to its delicious flavor, ease of preparation, and protein content. 1 cup quinoa contains over 8 grams of protein, as opposed to 5 grams in brown rice. I really enjoy grain salads in the summer and interchangeably use Wheat berries, Millet, Farro and Rice but when I am watching carbs I will reach for Quinoa, the magic seed from Southern Africa and make a quinoa salad.

Here quinoa is mixed with apricots, raisins, and a simple honey lemon dressing then tossed with pine nuts for a luxurious crunch. You can sub cashews, peanuts or even sunflower seeds or slivered almonds for the pine nuts depending on what you have in the cupboard.

This is a versatile side dish for lamb or pork or can be eaten as a salad for lunch


For the salad

  • 1 cup quinoa
  • 6 dried apricots cut into quarters
  • 1/4 cup scallions, finely chopped
  • ¼ cup raisins (soften by soaking in hot water if they are dry)
  • 3 Tablespoons pepper, finely diced (green, yellow, orange or red all work here)
  • 3 Tablespoons pine nuts
  • 2 teaspoons parsley, finely chopped

For the dressing

  • Zest of one lemon micro-planed
  • 2 Tablespoon lemon juice
  • 1 Tablespoon honey
  • 2 teaspoons parsley, finely chopped
  • 1/2 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 4 Tablespoons extra-virgin olive oil


    1. Cook the quinoa according to the package directions.
    2. Toast the pine nuts in a dry skillet until golden.
    3. Tossed quinoa, apricots, and vegetables and cooled pine nuts in a serving bowl.
    4. Make the vinaigrette by mixing the remaining ingredients together in a mason jar and shaking to blend
    5. Pour vinaigrette over salad and toss
    6. Season with additional salt or lemon juice to taste
