Potato Salad with Green Beans and Herb Vinaigrette

Potato salad with green beans and herb vinaigrette is a delicious and refreshing dish that combines the earthy flavors of potatoes and green beans with the zesty kick of a herb-infused vinaigrette. This salad is perfect for picnics, barbecues, or as a side dish for any meal and best of all no Mayonaise or Eggs, so it can sit outside a bit longer. After visiting the Burnsville farmers Market and finding all the delicious veggies and hernbs I knew I had to incorporate them into one tasty dish.

Here is the simple recipe we made on my show “Taste Buds” to get you started:

Potato Salad with Green Beans and Herb Vinaigrette

Yield: 6

This is a perfect salad for July and August when the herbs and fresh green beans are plentiful


  • 1 lb small red potatoes
  • 1 lb green beans trimmed and cut into 1 inch pieces
  • 1 Tablespoon Dijon mustard
  • 1/4 cup lemon juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup olive oil
  • 3 scallions white and green parts chopped
  • 1/4 cup chopped parsley
  • 1/4 cup chopped dill
  • 2 Tablespoons chopped Basil or Mint


  1. Put potatoes in a large saucepan with water. Boil, then simmer for 12-15 minutes until potatoes are cooked through. Remove the potatoes with a slotted spoon to a bowl.
  2. Add the trimmed and cut beans to the potato water and boil for 3-5 minutes until tender but crisp.
  3. Drain beans and plunge into a bath of ice cubes to stop the cooking
  4. Add beans to the bowl with the cooling potatoes
  5. Combine the mustard, lemon juice, salt, pepper, and olive oil in a mason jar and shake to blend.
  6. Drizzle the vinaigrette over the potatoes and beans and stir. Adjust seasonings and add additional salt and pepper if needed
  7. Toss with the herbs.
  8. Serve
