One Pot Chicken Taco Skillet with Orzo and Black Beans

We are making a few more foodie fun shows for Fox’s Jason Show TV. For one episode, I went into a family’s home, opened their pantry blind to what was inside, and cooked a meal for them and their two kids. It was terrifying but a total blast, and I can’t wait to see the footage. I cooked a one-pot meal with Orzo. Here is the recipe – I’ll add the video footage when we have an episode release date.

One Pot Chicken Taco Skillet with Orzo and Black Beans

We made this dish on the fly as part of our "Kitchen Crashers" segment on @jasonshowtv

Ingredients

  • 2 Tablespoons olive oil
  • 6 boneless, skinless chicken things
  • 1 packet of taco seasoning
  • 1 tsp smoked paprika
  • 1/2 cup sliced peppers diced
  • 1/2 cup diced onions
  • 2 cups dried orzo
  • 2 cans of black beans
  • 1 cup Lovejoys Bloody Mary Mix or a 16 oz can of diced tomato with juice
  • 3 cups vegetable or chicken stock
  • Avocado, sour cream, cilantro, cheese, and tortilla chips for garnish

Instructions

  1. Heat olive oil in a large skillet
  2. Dredge chicken thighs in taco seasoning mixed with smoked paprika
  3. Fry thighs in skillet for 3 minutes on each side until browned - remove from pan and place on a plate
  4. Add peppers and onions to the pan and cook for two minutes
  5. Add orzo and cook for one minute
  6. Add black beans, Lovejoy's Bloody Mary Mix (or tomatoes), and stock
  7. Nestle chicken breasts back in the pan and bring mixture to a bowl
  8. Once boiling, turn the heat to medium-high, cover the pan, and cook for 20 minutes until most of the liquid evaporates and the chicken is cooked through.
  9. Garnish with avocado, sour cream, cilantro, and tortilla chips.

Notes

*We used Lovejoy's Bloody Mary Mix, but you can also substitute other mixes or a can of chopped tomatoes
