Strawberry Rhubarb No Churn Ice Cream

No churn ice creams are a favorite of mine and this strawberry rhubarb is divine

Ingredients

Ice Cream Flavoring

  • 3 cups strawberries, de stemmed then chopped into bite size pieces
  • 3 cups rhubarb, diced
  • 1/2 cup granulated sugar

Ice Cream

  • 2 cups heavy cream
  • 3 Tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 tsp lemon zest
  • 1 (14 oz) can sweetened condensed milk

Instructions

  1. Place the strawberries, rhubarb, and sugar in a medium saucepan. Cook over medium heat for about 20 minutes, stirring often, or until the mixture is thick and jammy. Refrigerate until chilled, overnight
  1. In the bowl of a stand mixer fitted with the whisk, beat the heavy cream with the sugar, vanilla extract, salt, and lemon zest until medium-stiff peaks form. Using a spatula, fold the sweetened condensed milk into the heavy cream until combined, being careful not to overmix and deflate the custard.
  2. Pour half of the ice cream mixture into a loaf pan. Dot half of the fruit mixture over the ice cream. Swirl with a knife. Add the rest of the custard and swirl the remaining fruit mixture into the custard. Cover and freeze overnight.

  • Chocolate chip cookie dough: This is a classic combination that is always a crowd-pleaser. Simply add chocolate chip cookie dough chunks to your favorite vanilla ice cream.
     
  • Salted caramel: This combination is sweet and salty, with a rich and creamy texture. Add salted caramel sauce to your favorite vanilla ice cream.
     
  • Strawberry cheesecake: This combination is fresh and fruity, with a creamy cheesecake swirl. Puree fresh strawberries and add a broken up piece of cheesecake to the ice cream batter
     
  • Coffee and walnut: This combination is rich and nutty, with a hint of coffee. Brew a strong cup of coffee and let it cool completely. Then, add the coffee to your base and fold in chopped walnuts.
     
  • Mint chocolate chip: This combination is refreshing and minty, with a chocolatey crunch. Add fresh mint leaves and chocolate chips to your favorite vanilla ice cream.Add a hint of green food coloring for the classic mint green color.
