Kale Mallung

Kale Mallung (kale with toasted coconut)

This Kale Mallung recipe is a Sri Lankan dish from my friend Heather Jansz of The Curry Diva! Serve it as a side dish for curried lentil dhal with coconut rice. Enjoy!

Kale Mallung (Kale With Toasted Coconut)

This delicious Kale is a recipe from Heather Janz, The Curry Diva, from the "Taste Buds with Stephanie" episode where we talked about Curry.


  • Your favorite oil - (Not olive) not good a heat point
  • 1/2 onion chopped
  • A few whole green cardamom pods (totally optional)
  • 1 sprig of curry leaves (optional) Or use another herb of choice
  • 2 bunches of kale cut into small pieces like for a salad
  • 1 Tbsp. full of granulated garlic
  • 1 tsp of crushed chili (optional for some spice)
  • 2 to 3 cups of desiccated coconut - coconut flakes
  • 1 Tbsp. of curry diva blend or garam masala blend -
  • (Or 1 to 2 tsp each of coriander and cumin)
  • Your favorite salt to taste


Method Heat the oil in the wok or pan and add the onions and fresh curry leaves or herbs of your choice

Then add in and sautee the spices 

Then add all the chopped Kale - keep tossing the whole time

Then sprinkle with all the other things like the coconut, salt to taste  and granulated garlic

Toss really well until the kale is coated with the spices and half way cooked it's best not to overcook the kale 

Add salt to taste and serve warm or cold


You can also substitute sliced Cabbage ribbons or shaved Brussels Sprouts for the Kale
