Instant Pot Wheat Berries

I am trying to vary up my grain dishes, so I have more variety in my Summer Salads. I am trying wheat berries that I make in the Instant Pot.

Wheat berries are the whole kernel of wheat, with the bran, germ, and endosperm intact. They are a good source of fiber, protein, and other nutrients. Wheat berries can be cooked and eaten as a side dish, added to salads, or used in soups and stews. They can also be ground into flour for baking.

Here is how I make them in the Instant Pot

  • 6 cups water
  • 2 cups organic hard red wheat berries
  • Pinch of salt

Instructions

  1. Add water, wheat, and salt to Instant Pot.
  2. Secure the lid and set the valve to “sealing.”
  3. Set the manual timer for 30 minutes.
  4. Quick release and drain any remaining water
  5. Enjoy by themselves or in other recipes like this Apricot wheat berry salad, breakfast bowl, or mason jar parfait to go

To cook wheat berries on the stove top rinse them well and then place them in a pot with a ratio of 2 cups of water to 1 cup of wheat berries. Bring the water to a boil, then reduce the heat to low and simmer for 30-40 minutes, or until the wheat berries are tender. Drain any excess water and serve.

Wheat berries can be stored in an airtight container in the pantry for up to 6 months.
