Instant Pot Potatoes stay hot for hours and free up stovetop space

Ingredients

  • 10 medium Yukon Gold potatoes
  • 2 tsp salt, divided
  • 1 stick butter
  • 1/2 cup cream cheese
  • 1/4 cup goat cheese
  • 1/2 cup cream

Instructions

    1. Peel the potatoes.
    2. Place in the Instant Pot and cover with water by an inch.
    3. Add 1 tsp salt
    4. Cook on the manual setting for 12 minutes.
    5. Release steam immediately. Drain the potatoes.
    6. Using a potato masher, mash the potatoes.
    7. Mix in the butter, cream cheese, goat cheese, cream, and one teaspoon salt to taste

Notes

Potatoes will stay hot in the Instant Pot for 4 hours if covered
