Hot Reuben Dip
A Hot Reuben Dip is a delicious appetizer or snack inspired by the classic Reuben sandwich, which typically includes corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing on rye bread. The dip version combines these same flavors in a creamy, warm dip form that you scoop onto rye crisps. Another way to enjoy this dip would be to spread it on mini rye bread and griddle it for mini sandwiches. A variation is also to make a Rachel vs. a Reuben, which subs out the corned beef for turkey.

Hot Reuben Dip

This dip has all the fillings of your favorite Reuben
Ingredients
- 1 8 ounce package cream cheese softened
- 1/4 cup sour cream
- 1/4 cup Mayonaisse
- 3 teaspoons ketchup
- 1/2 tsp lemon juice
- 1 tsp pickle brine
- 1/2 tsp horseradish
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 cup dill pickles chopped fine
- 1 Tablespoon finely chopped onion
- 8 ounces deli corned beef coarsely chopped
- 1 cup Swiss cheese shredded
- 1/2 cup sauerkraut drained well
- Rye chips
Instructions
- Preheat oven to 400
- In a large bowl, combine all ingredients and mix well. Spread into prepared pie plate and bake until hot and bubbly, about 20 minutes. Serve with rye crisps
Notes
- You can make these into mini Reubens by spreading a tablespoon of filling on mini rye bread and griddling them with butter to toast either side of the sandwich and warm the filling.
- Consider subbing turkey for Corned Beef and making a Rachel instead of a Reuben
