Hearty Soup Recipes
There is no bad time for soup. Sure, the summer months are hot, but you can still squeeze in the occasional light and tasty soup. Even if you take the summer off, we have at least a solid seven months of soup season here in Minnesota. From brothy to creamy to chili(y?), there are soups for everyone. Here are some of my favorite soup recipes that incorporate different styles, flavors and ingredients.
My top 20 Hearty Soup Recipes
Chicken Broth Recipe
Every good soup starts with great broth and the best ones are made from scratch. Homemade chicken broth is easy to make and even easier if you have an Instant Pot. This Instant Pot chicken broth recipe is hands-off and fast, and you’ll end up with perfection. I recommend making as much as you can and freezing the extra broth so you can make delicious soups all fall and winter
Slow-Cooker Butternut Squash Soup
This butternut squash soup is a can't-miss seasonal lunch or dinner. It's hearty enough to work as a meal on its own, or it makes a great side dish or starter. I love the addition of apples for a little tart sweetness.
Creamy Roasted Tomato Basil Soup
Adapted from Ina Garten’s “Barefoot Contessa Cookbook.” This is the tomato soup I gave to friends and family for the holidays. It is such a wonderful flavor, and it was a huge hit as a gift. Tomato soup is one of my favorites, with or without the grilled cheese, and the basil adds a wonderful flavor. This is a rich, creamy soup that you will want to make again and agai
Slow Cooker White Bean and Ham Soup
White beans and ham go together perfectly in a soup. If you have leftover ham from a holiday meal, be it Christmastime or Easter, this recipe is a great option. You can also get a ham hock from your favorite meat market to give your broth great flavor and pick the meat from.
Bacon, Potato Corn Chowder
This soup is one I make in the Summer with fresh corn but I also make it in the Winter with frozen corn that I bag in Ziploc 2 cups at a time from the last of the Fall Farmers Market corn. I love that it tastes so fresh even in February.
Beer Cheese Soup
Beer cheese soup is my jam. I have always loved super crumbly sharp cheddar cheese and beer; well, that goes without saying. I usually make this soup after the holidays. We typically end up with lots of cheeses milling about the refrigerator from various holiday gift baskets. Sometimes I vary the cheeses I use, but it’s essential to use enough sharp cheddar to get a decent flavor profile.
Slow-Cooker Beef Stew
If you’re like me, you could live off stews from the first 50-degree day until the snow finally melts in the spring. The homey warmth of a full meal in a bowl is not only delicious, but it’s also about as comforting as food gets. Beef stew is, of course, the go-to, and this recipe is a classic stew that is sure to delight. The bonus when it comes to stews is that you get to “set it and forget it,” because it is a slow-cooker recipe extraordinaire. As a bonus, I included a few of my other favorite slow cooker recipes with this beef stew.
Pork and Tomatillo Stew
This recipe comes from the wonderful cookbook, The Art of Mexican Cooking. There is so much to love about this dish, from its heartiness to the depth of flavor. Pork is such wonderful cold weather meat, and the spareribs in this recipe come out tender and flavorful, and pair beautifully with the tomatillos (which are cooked with the husks on). If you are looking for a dinner that’s a little different but still comforting, this is a great option.
Instant Pot Chicken Chile Verde
Chili is one of the best homey recipes for fall and winter. I serve this Instant Pot chicken chili verde recipe to friends and family on my patio around the fire pit. When paired with a signature cocktail or cold weather beer and some tortilla chips, you have all the makings of a cold weather get together. Plus, it’s fast and easy to make because of the Instant Pot.
Southwest Chicken and Vegetable Instant Pot Soup
If you’re in a soup rut or stuck on some of the basics, this is a great recipe to get your creative soup juices flowing. It feels familiar, but has a little extra zest and spice, and is one I recommend adding to your dinner rotation.
Instant Pot Chicken Wild Rice Soup
You have to break out a chicken wild rice soup recipe every fall. It’s a rule. This is another Instant Pot recipe, which makes it quick and easy, and the result is a delicious and welcoming soup that is sure to be a hit for everyone.
Beef Barley Soup
The perfect soup to make with leftover Prime Rib or Chuck Roast
Instant Pot Beefy Chili
An easy Instant Pot meaty chili that has a magic thickening agent - Pumpkin!
Slow Cooker Chicken Noodle soup with Homemade Egg Noodles
This Chicken Soup is made better with your homemade egg noodles
Instant Pot Creamy Pumpkin Soup
An easy weeknight meal with some bread
Slow Cooker Buffalo Chicken Chili
This is an easy assemble and forget-it meal for the Crock Pot or Instant Pot.
Instant Pot Curry Red Lentil and Coconut Soup
This meatless Monday dish can be reheated and tucked into a burrito or served over rice for a second helping.
Zuppa Toscana Copycat
This knock off Zuppa Toscana soup is very hearty and can be served at dinner with bread.
