Easy Lemon Bars

Lemon bars

Sometimes the simplest desserts are best and these easy lemon bars fit the bill and are quite delicious. The crust comes together in a snap and you mix the filling while the crust is baking. It can’t get much easier than that.

The simplest recipes are sometimes the best and these lemon bars are delicious

Ingredients

Make the crust

  • 2 sticks melted unsalted butter
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 2 cups 1/4 cups flour

Make the filling

  • 2 cups sugar
  • 6 Tbsp flour
  • 6 large eggs
  • The juice of 4 lemons
  • The zest of two lemons
  • 1/4 cup confectioners sugar for finishing

Instructions

  1. Preheat the oven to 325°F and line a 9 x 13 glass pan with parchment paper that hangs over the sides.
  2. Make the crust by mixing the melted butter, sugar, vanilla, salt, and flour in a large bowl with a wooden spoon.
  3. Drop the dough in rough balls about a Tablespoon in size into the prepared pan and press firmly and evenly into the prepared pan.
  4. Bake for 25 minutes until the edges are just starting to brown
  5. Remove from the oven, and while the crust is still warm, dock it all over with a fork
  6. Mix the sugar and flour together in a large bowl and whisk in the eggs, lemon juice, and zest until completely combined.
  7. Pour the filling over the crust and bake for 25 minutes
  8. Let it cool in the pan for 2 hours, then lift the bars out by hanging them onto the parchment paper.
  9. Sprinkle with powdered sugar, and for added decoration, you can zest lemon over the bars or add raspberries before you. cut them into squares.
  10. Refrigerate bars if not serving right away
