This creamed spinach is the perfect steak house side and uses goat cheese with garlic to amp up the creaminess.

Creamed Spinach With a Crunchy Crumb Topping

This creamed spinach is a perfect side dish to serve alongside your favorite roast chicken recipe or butter-basted inch-and-a-half perfectly marbled rib eye straight from your butcher. Adding garlic herb goat cheese amps up the flavor making this dish buttery and savory with the crispiness of the crunchy bread crumbs.


  • 6 Tbsp butter (4 Tbsp reserved for topping)
  • 1/2 cup onions, diced
  • 2 Tbsp all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 pkg (4oz) garlic herb Humble Goat Cheese
  • 4 batches of cooked spinach (about 10oz) sauteed and squeezed dry of excess moisture
  • 1 tsp salt
  • 1 tsp pepper,
  • Pinch cayenne pepper
  • 2/3 cup coarse fresh bread crumbs
  • 2 Tbsp parmesan cheese, grated


  1. Preheat oven to 425F
  2. Saute onions in 1 Tbsp butter until soft, about 5 min. add the flour and stir to coat the onion.
  3. Gradually whisk in the milk and heavy cream constantly stirring to prevent lumps. Simmer for 1 minute..
  4. Stir in Goat cheese a little at a time until melted and smooth.
  5. Remove the saucepan from the heat. Add spinach and seasonings.
  6. Transfer spinach to the prepared baking dish. Combine crumbs with Parmesan cheese and sprinkle over the top of the casserole, packing down to adhere.
  7. Dot with the remaining butter
  8. Cook 20 to 25 minutes until crumbs are golden and the sauce is bubbly
