Coconut Rice

Coconut rice is such a versatile side dish for many types of cuisines. This is a Sri Lankan coconut rice recipe from my friend Heather Jansz of The Curry Diva! Serve it as a side dish for curried lentil dhal alongside this amazing kale mallung (kale with toasted coconut) dish.

This rice was made by Heather Janz on the "Taste Buds With Stephanie" episode where we explored Curry.


  • 1 Tbsp coconut oil or ghee
  • 1 tsp turmeric powder
  • 2.5 cups basmati rice
  • 2.5 cups water
  • 1/2 cup coconut milk
  • 1/2 tsp sesame oil
  • Curry leaf or your favorite herbs (optional)
  • Pandan leaf (optional)


Rice Cooker

Set Ingredients in your rice cooker and cook as instructed or for about 20 minutes

Instant Pot

If using an Instant Pot, cook on manual for 10 minutes and let it naturally release for 5 minutes.

Stove Top

If cooking on the stove, stop the spices in the ghee, then add the rice water and coconut milk and bring to a boil. Turn it down to simmer and simmer for 20 minutes


You can add in other spices or onions or peas and carrots or coconut
