Asparagus wrapped prosciutto
These tasty spears are salty and roasty
Ingredients
- 1 lb thick asparagus spears
- 1 tbsp olive oil
- 1/2 lb thinly sliced prosciutto
Instructions
- Preheat oven to 425F.
- Snap the tough and fibrous ends off the asparagus.
- Place the asparagus spears on a sheet pan, and drizzle with olive oil, Toss well to coat.
- Lay the prosciutto slices out onto a cutting board. Slice each in half down the length of the slice, then roll the asparagus spear up in the prosciutto.
- Arrange in a single layer on the sheet pan.
- Bake for about 12-15 minutes until the asparagus is still somewhat firm, but tender.
Variations
- For a more flavorful dish, brush the asparagus spears with olive oil and balsamic vinegar before wrapping them in prosciutto.
- You can use bacon or ham if you don’t have prosciutto.
- To make this dish ahead of time, wrap the asparagus spears in prosciutto and store them in the refrigerator for up to 24 hours. When you’re ready to cook, bake them according to the instructions.
- This dish is also delicious and served with a side of your favorite dipping sauce, such as ranch dressing, chipotle mayo or my favorite – an equal mixture of mayonnaise and Dijon.
- Sprinkle parmesan cheese on the spears halfway through cooking for a cheesy addition.
