Apple Coffee Cake
This is straight from my friend Kim’s recipe box to you with a few modifications. I visited Sweetland Orchard this week, and Gretchen Merryweather the owner of the orchard, loaded me up with baking apples that screamed Fall coffee cake with crunchy streusel. Apple streusel cake is a delicious dessert combining apple flavors and a sweet, crumbly streusel topping.
When choosing apples for a cake, selecting apples that will hold their shape and provide the desired flavor and texture for your specific recipe is essential. Here are some popular apple varieties that work well in cakes:
- Granny Smith: These tart and firm apples are a popular choice for baking because they hold their shape and provide a nice contrast to the sweetness of the cake. They work well in apple pies and cakes.
- Honeycrisp: Honeycrisp apples have a sweet, slightly tart flavor and crisp texture. They add a pleasant sweetness and juiciness to cakes.
- Fuji: Fuji apples are sweet and firm, making them a good cake choice. They add a sweet, mellow flavor and maintain their texture when baked.
- Golden Delicious: These apples are mildly sweet and have a tender texture. They work well in cakes where you want a softer, smoother apple texture.

This apple coffee cake has a brown sugar streusel that highlights a delicious cake chock full of apples
Ingredients
For the crumble
- 1 ½ cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/2 teaspoon salt
- 1 stick butter
- 1 teaspoon almond extract
For the cake
- 4 cups apple peeled and diced into 1/2 inch chunks
- 2 beaten eggs
- 1 teaspoon vanilla
- 1 ¼ cup sugar
- 2 teaspoons cinnamon
- 1 teaspoon cardamom
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1 stick melted butter
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
Instructions
- Preheat the oven to 350 and spray a 9-inch cake pan with baking spray
- Start by making the streusel first. Add the flour, brown sugar, sugar, and salt to a medium bowl. Stir to combine.
- Melt the butter and mix with the almond extract. Pour the wet mixture over the dry mixture and stir with a fork until large crumbs form. Set aside
- In a large bowl, add diced apples, vanilla and eggs. Stir until combined
- Add sugar, cinnamon, ginger, cardamom, nutmeg and butter. Stir until combine
- Add flour, salt, and baking soda. Stir again until combined
- Pour in the batter and spread in an even layer with a spatula.
- Top with the cake batter with the prepared crumble.
- Bake for 70-80 minutes or until a toothpick comes out clean.
