It’s the wonderful month (of October, of course) when the weather makes the turn to shorter, colder days, and I bring out all of my favorite slow cooker recipes. These puppies run the gamut from hearty and beefy chili to warm drinks to light vegetarian dishes. There are so many ways to enjoy dishes cooked low and slow, and I’ve compiled all my favorite recipes into a list that is, frankly, huge.

This is less of a recipe and more of a technique! If you want vegetable broth, simply use more vegetables and omit the meat and bones. For chicken, beef, or turkey broth, use whatever bones and parts you have on hand, plus about 3 cups of vegetable scraps.
