Crunch Wrap Supreme (Vegetarian) Copy Cat

There is a very specific kind of hunger that only a Crunchwrap Supreme can fix — the 9 p.m., just-got-home-from-a-show, standing-in-front-of-the-fridge kind. If you’ve ever craved a homemade Crunch Wrap Supreme, this post is for you. For years my solution was the drive-thru. When I recorded a “Taste Buds With Stephanie” episode with our friends at Herbivorous Butcher and we were given Vegan Chorizo and Vegan Queso, I knew I should try to make a Crunchwrap Supreme.

That’s the whole story of this recipe. It’s the crunchy-creamy-melty layered stack you already love, made in your own kitchen with a hot skillet and a little bit of tortilla origami. It also happens to be endlessly adaptable — I made mine with the vegan chorizo, but ground beef, turkey, chicken, or beans all work exactly the same way.

The magic of a Crunchwrap Supreme is texture: a warm, seasoned filling, a cool layer of sour cream and lettuce, a crunchy tostada shell in the middle, and a griddled tortilla exterior that goes golden and crisp in the pan. Most homemade versions skip the fold-and-flip step and end up soggy or falling apart. This version walks through the pleating technique so your Crunchwraps seal tight, hold their shape, and crisp up evenly on both sides — no toothpicks, no foil, no mess.

It also comes together faster than a trip through the drive-thru line, uses ingredients you likely already have, and scales up easily for game day, taco night, or a cabin weekend with a crowd.

Ingredients

  • 1 lb. vegan chorizo (substitute ground beef, turkey, chicken, or beans)
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. ground paprika
  • 1 tsp. kosher salt
  • 6 large flour tortillas
  • 6-inch flour tortillas (for the cutout rounds)
  • 1/2 cup vegan queso (substitute cheese sauce or nacho cheese sauce)
  • 4 tostada shells
  • 1 cup sour cream
  • 2 cups shredded lettuce
  • 1 cup chopped tomatoes
  • 1 cup shredded cheddar
  • 2 Tbsp. vegetable oil

Instructions

1. Brown the filling. In a large nonstick skillet over medium heat, combine the chorizo (or your protein of choice) with the chili powder, cumin, paprika, and salt. Cook, breaking it up with a wooden spoon, until fully cooked through, about 6 minutes. Transfer to a medium bowl, draining any excess liquid if needed, and wipe out the skillet.

2. Cut your tortilla rounds. Stack the 4 large flour tortillas and center a tostada shell on top. Using a paring knife, trace around the edge to cut 4 smaller rounds — or skip the cutting altogether and use the 6-inch tortillas instead.

3. Build the layers. Scoop about 1/3 cup of the cooked filling into the center of each remaining large tortilla, leaving a generous border for folding. Drizzle with queso, then top with a tostada shell. Spread sour cream over the shell, then layer on lettuce, tomatoes, and shredded cheddar.

4. Fold and seal. Set a small tortilla round on top of each stack. Working around the edge, tightly fold the large tortilla toward the center, creating pleats as you go until it’s fully sealed. Quickly flip each Crunchwrap so the pleated side faces down and holds together.

5. Griddle until golden. Brush or spray both sides lightly with oil. In the same skillet over medium heat, cook the Crunchwraps seam-side down, flipping halfway through, until golden and crisp — about 4 minutes per side. Pressing down with a second skillet or a burger press while they cook helps them brown evenly.

6. Serve immediately. Slice in half if you’re feeling fancy, or eat it whole over the sink like the rest of us.

Tips for the Best Copycat Crunchwrap Supreme

  • Don’t overfill. It’s tempting to load these up, but too much filling makes sealing the pleats nearly impossible. Stick to the 1/3 cup measurement.
  • Work quickly when you flip. The fold holds best when you invert the Crunchwrap right away and get it into the hot skillet seam-side down before it has a chance to unravel.
  • Weigh them down. A second skillet, a burger press, or even a foil-wrapped brick gives you that flat, evenly browned surface.
  • Make it a make-ahead meal. Assemble the Crunchwraps ahead of time, refrigerate, and griddle just before serving.
  • Customize the protein. Ground beef, turkey, chicken, black beans, or vegan chorizo all work — just season and cook the same way.

Frequently Asked Questions

Can I make Crunchwraps ahead of time? Yes. Assemble them fully, wrap tightly, and refrigerate for up to a day. Griddle them fresh right before serving so the tortilla crisps properly.

What can I use instead of tostada shells? A tortilla chip base won’t hold up the same way, but a lightly fried or oven-crisped corn tortilla can work in a pinch if tostada shells aren’t available.

Can I freeze Crunchwraps? It’s best to freeze them unassembled — cook and freeze the filling separately, then build and griddle fresh. The lettuce, tomato, and sour cream don’t freeze well.

How do I keep the Crunchwrap from falling apart? The key is a tight pleat fold and a quick flip. As long as the pleated seam is facing down when it hits the hot skillet, the heat helps seal it shut.

Can I make these vegetarian or vegan? Absolutely. Use vegan chorizo or seasoned black beans for the protein, and swap in vegan queso and dairy-free sour cream and cheese.

Ingredients

  • 1 lb. Vegan Chorizo you can substitute ground beef turkey, chicken or beans
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. ground paprika
  • 1 tsp kosher salt
  • 6 large flour tortillas
  • 6 inch tortillas
  • 1/2 cup Vegan queso; you can substitute cheese sauce or nacho cheese sauce
  • 4 tostada shells
  • 1 cup sour cream
  • 2 cups shredded lettuce
  • 1 cup chopped tomatoes
  • 1 cup shredded cheddar
  • 2 Tbsp. vegetable oil

Instructions

  • In a large nonstick skillet over medium heat, combine beef, chili powder, cumin, paprika, salt, and pepper. Cook, breaking up meat with a wooden spoon, until no longer pink, about 6 minutes. Transfer beef mixture to a medium bowl and drain if needed – wipe out the skillet.
  • Stack 4 large flour tortillas and place a tostada shell in the center. Using a paring knife, trace around the edges of the shell to cut 4 smaller flour tortilla rounds or substitute the smaller 6 inch rounds
  • Add a 1/3 cup scoop of meat to the center of the remaining 4 large flour tortillas, leaving a generous border for folding. Drizzle cheese sauce over each, then place a tostada shell on top. Spread sour cream over each shell, then top with lettuce, tomato, and cheese. Place smaller flour tortilla cutouts on top and tightly fold edges of large tortilla toward the center, creating pleats. Quickly invert Crunchwraps so pleats are on the bottom and they stay together.
  • Spray with cooking spray or brush with olive oil
  • In the same skillet over medium heat, add the Crunchwraps seam side down and cook, turning halfway through, until the tortilla is golden, about 4 minutes per side. To help create an even browning surface, weigh the wraps down with a skillet or burger press.
