Few things beat classic buffalo wings with a crispy skin. I like this oven baked chicken wings recipe even more than the fried variety from your favorite bar. You can also check out my Air Fryer Chicken wings, which are another great option for making wings at home. Plus, you’ll find homemade ranch and a bonus Asian Chicken wings recipe below!

There are lots of chicken wing recipes for home cooks. In fact, I have a ton pinned on my Pinterest page. Many call for making the wings in the Instant Pot or a slow cooker, and while they are good, to get that really crispy skin, you end up broiling them in the oven. I like simple cleanup and fewer pots and pans, so I thought I would test this oven baked chicken wings recipe and see if I could get a delicious crispy skin. The verdict? Yes. Yes, I can, and I don’t think I’ll make wings any other way again.

My Top 3 Homemade Chicken Wings Tips
The secret to crispy oven baked chicken wings is to let the wings dry out with a flour mixture for an hour in the refrigerator and then bake them in a hot oven for 45 minutes. Here are my three tips to perfect wings:
- Shake the wings in the plastic bag with the flour and seasonings.
- Let the wings dry out in the fridge for at least 8 hours (overnight is even better).
- Baste or dip the wings in butter and sauce for flavor and crispiness.
Homemade Ranch Dressing (With Tarragon)

Ranch Dressing Ingredients
- 1/2 cup buttermilk
- 3 Tbsp plain yogurt
- 2 Tbsp mayonnaise
- 1 tsp finely dry tarragon – Note you can also use fresh tarragon dill, parsley, chives or celery leaves (or a combination)
- 1 clove garlic finely minced with a microplane grater
- 1/2 tsp dijon mustard
- Lemon juice to taste I sometimes grate the zest in there too. You are looking for a lemony pop not sour
- Few dashes Tabasco
Combine all ingredients in a Mason jar and shake. Season to taste with salt and black pepper.
Bonus Recipe: Instant Pot Asian Chicken Wings
- 2 lbs of frozen chicken wings about 15-20 wings
- 1/2 c water
- 4 tbsp butter
- 1/2 c ketchup
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp gochujang or chili garlic sauce
- 1 tbsp sriracha
- Sesame seeds to sprinkle as garnish
Cook wings on trivet with 1/2 cup water for 5 minutes on high manual pressure. Release pressure and move wings to a lined baking sheet. Melt butter and ingredients in a saucepan, dip the wings in sauce and bake at 400 degrees for 10 minutes. Flip wings and broil for about 2 minutes, monitoring them to avoid burning.
To make this recipe without an Instant Pot, coat the wings in 1 cup of flour and 1/2 tsp of salt using a plastic bag. Refrigerate for at least 1 hour and bake the wings for 30 minutes at 400 degrees. Add sauce from above and return to baking sheet for 15 minutes, or until brown and crispy.

Notes
- *I like Heather's Dirty Goodness Censored – it's really hot
- Here is a link to the spice blend
- Hot sauce such as Frank's RedHot works. I used Cholula and Tapatio.
- For an Asian version of these wings use a different sauce profile. Try K-Mama Sauce from a local Minnesota Company instead of hot sauce with the same amount of butter. Cook as usual.
