There’s not much I love more than strolling the aisles of my local Trader Joe’s. Whenever I do, I make sure to pick up a box (or two) of their ice cream sandwiches. However, recently, I decided to try my hand at making them at home.
The results were so much better than expected. In fact, my DIY brownie crisp coffee ice cream sandwiches are so delicious that I may never go back to the store-bought version again. Try them out for yourself, and I’m confident you’ll feel the same!
Ingredients You’ll Need
Below is an overview of the recipe. Please be sure to scroll down to the recipe card for the complete details!
- Sugar – Granulated sugar sweetens the brownie batter.
- Butter – I recommend using unsalted butter to add rich flavor without making the brownies too salty.
- Eggs – These enhance the richness and give the brownies structure, so they hold their shape.
- Vanilla Extract – Use a high-quality pure vanilla extract!
- Flour – All-purpose flour forms the base of the brownie batter. If needed, you can substitute a 1:1 all-purpose gluten-free flour.
- Cocoa Powder – Use a high-quality unsweetened cocoa powder for the best chocolate flavor.
- Salt – A little bit goes a long way to enhance the rest of the ingredients.
- Baking Powder – This is a leavener that helps the brownies rise as they bake.
- Chocolate Salt – Minnesota-made Chocolate Salt from the Golden Fig is my favorite, adding extra chocolate flavor.
- Ice Cream – Use a high-quality coffee-flavored ice cream to recreate the original brownie crisp coffee ice cream sandwiches.
How to Make Homemade Brownie Crisp Coffee Ice Cream Sandwiches
Before you begin, preheat your oven, and grease two 9×13 baking dishes with cooking spray.
- Combine. Add the sugar, butter, eggs, and vanilla to a large bowl, whisking to combine. Then, use a hand mixer or stand mixer to beat in the dry ingredients until a smooth batter forms.
- Transfer. Pour the batter into the prepared pans, spreading it out evenly. Then, sprinkle one of the pans with the chocolate salt.
- Bake. Bake the brownie layers until the batter is set, and let them cool for about five minutes.
- Remove. Run a knife along the outside of the pans, and flip them upside down to release the brownies. Place one of the brownie slabs on a baking pan lined with plastic wrap, letting it hang over the sides. Top the slab with ice cream, spreading it out evenly, leaving about ½ ½-inch rim around the edges.
- Layer. Place the second brownie slab on top, pressing down gently.
- Freeze. Transfer the pan to the freezer to chill and set overnight.
- Serve. Slice the ice cream into bars, and enjoy!

Possible Variations
- Brownies – Swap the brownies with brownie chocolate chip cookies, chocolate chip cookies, or oatmeal cookies.
- Ice Cream – Replace the coffee ice cream with any flavor you like best, such as vanilla ice cream, chocolate, or caramel.
- Toppings – Dip your sandwiches in melted chocolate, drizzle them with caramel, or add icing before serving.
- Mix-Ins – Sprinkle extra ingredients over the ice cream, or roll the edges over them to coat them. Chopped nuts, coconut flakes, chocolate shavings, and sprinkles make great options.
Storage
Once set, transfer leftover brownie crispy coffee ice cream sandwiches to an airtight container or sealable bag. They will stay fresh in the freezer for two to three months, but never last that long!
