So, I thought we had the small Thanksgiving planned for this year. You know, 10 or so family members, an 18lb bird, 2 pies – well, that was a week ago before Coronavirus put us back on lockdown. Like many families – the need for an immediate Thanksgiving pivot is in order. For many, this means ordering a small feast for two – for others, it means ditching the feast all together and going the non – traditional route. Yes -Nicollet Island Inn has a lovely Holiday spread that you can order for just one person. You pull into their parking lot for pick up and you are on your way with a hot meal for one. There is an amuse-bouche, your choice of soup or salad, the main course chooses from Roast Turkey, roasted sliced, strip loin steak or Vegetable rigatoni. For dessert, choose between pumpkin pie or chocolate mousse. Yum, this is a delicious menu for one at $59 per guest.

The ultimate Pivot is to decide to skip the feast all; together – Skip it and get a charcuterie box for one, a bottle of wine or champagne, and your favorite movie. The Board Loon is a small business that makes beautiful 1 or 2 person charcuterie picnic boxes full of cheese, meats, fruit, and spreads artfully displayed in a cute box for one. They have these beautiful boxes for pick up, or they have a virtual charcuterie class that happens tonight at 5 or 6:30 that you can still sign up for and make your own box. Originally the plan was to have in-person service, but with the quick Pivot, Baldamer in Roseville has moved to Thanksgiving at Home Dinner for 2. Dinner includes Turkey, of course, but also smoked Prime Rib and garlic mashed potatoes and green bean casserole, yam casserole, and carrots. For dessert, you can choose from half a pumpkin, apple, or pecan pie. I have a feeling there will be some leftovers here. You need to order by 8 pm today and can pick up hot and ready on Thanksgiving. $145.
