Easy’s Easy Drink Infusions

 

A few weeks back my Weekly Dish radio show (MyTalk 107.1 FM) had Erik Eastman on as a guest. Erik is a mixologist and founder of Easy and Oskey, a bitters manufacturer and drink consulting company.  We had a chance to talk about shrubs and drink infusions. He gave me some recipes that I was eager to try including the infused sweet peas and gin and the strawberry pepper shrub.  They both worked well.  I can see how this is addicting. Mash some stuff, strain it and put it in a bottle is fun and requires very little cooking expertise.

Try these two recipes to get you started.

Recipes adapted from Erik Eastman’s mouth to my ears!

Sugar Snap Pea Gin

Ingredients:

2 cups sweet peas

2 cups vodka

Directions:

Slice sweet peas and put in a container that will hold them and roughly 2 cups of vodka or container to fill.

Steep for a minimum of two hours up to 24 hours.

Strain and make a Sweet Pea Gin Gimlet

Sweet Pea Gin Gimlet

Ingredients:

2 oz. sweet pea gin

1 oz. simple syrup or Roses Lime juice

1 oz. fresh lime juice or to taste

Directions:

Shake over ice

Strain

Serve

 

Strawberry Pepper Shrub

Ingredients:

1 pint of fresh washed strawberries (the fresher the fruit the better the syrup)

1 cup sugar

1 cup white distilled vinegar

4 -6 peppercorns or two grinds of the pepper mill.

 

Directions:

Wash berries

Mash or muddle or you can even blend in a mixer or food processor

Cover with sugar

Stir and refrigerate until your fruit is surrounded by juice and syrup

Strain the solids out in a chinois or a strainer with a coffee filter placed inside. Press on the solids to extract as much juice as possible.

Add vinegar and whisk to combine until sugar is dissolved.

This shrub will last indefinitely in the refrigerator.

 

Make any of the drinks below with your awesome homemade shrub.

 

Shrubarita:

1.5 oz. Blanco tequila

1.5 oz. strawberry shrub

1.5 oz. lime juice

Mix and serve on the rocks.

 

Strawberry wine:

Mix 1 part shrub to 3 parts Prosecco.

 

Strawberry Mojito

Muddle 6-7 mint leaves with a slice of lemon or lime.

1.5 oz. white rum

1.5 oz. shrub

Mix, pour over ice and top with 2-3 oz. soda water.
